Tonight I totally made an “oh shit, I never ate a salad” meal. I dressed a bed of greens and mushrooms with leftover lime citronette, then ladled a hearty serving of beef stew over the top. My dinner, or, as one of my kids said, with her nose wrinkled in disgust, “the weirdest salad ever.”

My salad meal in a bowl was actually pretty good, though a balsamic vinaigrette would have been a much better match for the tomato-based beef stew.

Day Twenty: Light Lime Lunch

Romaine lettuce, cucumber, garbanzo beans, mushrooms, mint, and lime zest with a lime citronette. Delicious. The bright lime worked so well with the crunchy romaine and the mint–very light and fresh.

Homemade tzatziki, a hefty bed of arugula, a quartered tomato, garbanzo beans, sliced mushrooms, a splash of rice wine vinegar, a few glugs of extra virgin olive oil, fresh ground pepper, and more of those toasted pine nuts. Not bad!

Yummy…I started with a bed of arugula, piled it high with cucumber, garbanzo beans, mushrooms, avocado, and grapefruit, then zested a lemon over it all, tossed it with a lemon citronette, and finished it off with a handful of toasted pine nuts leftover from last night’s pasta dinner. Delicious.

I realized too late that the only meal I was going to make for myself was breakfast, so when my sister made a huge salad for lunch, I dished myself up an enormous plate and snapped a picture. Food always tastes extra yummy when someone else makes it, and this salad was delicious.
